Black or Red Tea
In the West, Black tea is so called due to the colour of the uninfused leaves, whilst in the East, it is called red tea due to the colour of the liquor when the leaves are infused. Chinese black tea is fully-oxidised whole leaf tea, the best varieties of which are made by hand, not the commercial CTC (crush, tear and curl) machine method used for 95% of the tea on the global market. The flavours are determined by the length of the oxidisation process.
