The two whites are the least processed of all the teas, they are simply picked in the spring and scattered on bamboo racks to dry in the sun. They taste delicate and smooth. The greens are high grown and have a bright, nutty flavour. They have been heated to prevent further oxidation and retain a long, sweet, green aftertaste.
