Using small tea bowls without handles is the traditional way to drink Chinese tea. Most fine teas are made with water off the boil so the tea liquor is hot, not boiling, to draw out the subtle flavours from the leaves. It is also said that if the liquor is too hot to hold, it is too hot to drink.
