The most coveted of all tea types, puerh is a compressed, aged and post-fermented green tea that is one of the only teas that is ‘laid down’, like fine wine, to improve with age. The leaves are either left raw (sheng) or cooked (shou), and further, are then either compressed into cakes or left loose. Nowadays, puerh drinkers can purchase reasonably priced puerh to drink every day, or indulge in rare and expensive types, to collect and savour.
