  • Brewing: 90˚, 3g (2 tsp) per 200 ml, 15 sec, 4-5 infusions. Increase subsequent infusion times to taste.

Preparation

 

Gaiwan / Artisan Press / Yixing or GlassTea Pot

Warm and rinse your vessel and cups with boiled water. Place two teaspoons or 3g of tea into your vessel; a simple rule of thumb is that the leaves should generously cover the bottom. Add spring or filtered water at 90° or just off the boil. Infuse for 15 seconds and pour into your cup(s). Remember to re-infuse 3-4 times, increasing steeping time to taste. Enjoy the evolution of taste as the leaves release their nutrients.

 

 Story

This potent Qi tea was sourced on a tea soaked adventure to Northwest Vietnam. We drove for 8 hours from Hanoi up winding roads to the remote Suio Giang Village in the region of Yen Bai.

 

The indigenous Hmong people created a collective to maintain the trees in a natural and traditional way. Every year a ceremony is conducted to worship the ancient trees whose roots reach deep into the mountains. The growing popularity of ancient tree tea in the west and throughout Asia has been beneficial for the Hmong because people now recognise the value of these ancestor teachers and their medicine. During hard economic times the ancient tea trees would often be cut down for firewood. A tea forest rehabilitation programme has been initiated by the local government to protect an area of 715 acres of wild tea trees – about 85,000. From the gnarled trunks the trees are estimated to be between 300 – 800 years old.

 

The tea is called Shan Tuyet or Snow tea, which comes from the white moss that grows on the trunk of the trees and the silver down that remains on the leaves after processing. The taste is astringent and resembles a young sheng puerh. This tea is ideal for aging and the taste will only become smoother with age. It was an honour to meet with the Suoi Giang Tea Cooperative manager, Mrs. Lam Thi Kim Thoa and her husband who shared this year's spectacular harvest with us and took us on a tour of the forest.
